Authentic Assam Masala Chai Recipe


Masala chai starts with strong CTC tea for a reason — it's the only base that holds its own against milk, sugar, and a full spice mix. This is a traditional stovetop method, no shortcuts.

Ingredients (serves 2)

  • 2 heaped teaspoons CTC tea
  • 1.5 cups water
  • 1 cup milk
  • 2-3 crushed green cardamom pods
  • 1 small piece crushed ginger
  • 1 small piece cinnamon (optional)
  • 2-3 crushed black peppercorns (optional)
  • Sugar to taste

Method

  1. Bring water to a boil in a saucepan with the crushed spices.
  2. Simmer for 2 minutes to let the spices infuse the water.
  3. Add the CTC tea and let it boil for 1 minute.
  4. Add the milk and sugar, bring back to a boil, then reduce heat and simmer for 2-3 minutes, stirring occasionally.
  5. Strain into cups and serve hot.

Tips

Crushing the spices rather than using them whole releases far more flavour. Let the tea and spices boil together briefly before adding milk — this is what gives Assam-style chai its depth compared to just steeping everything at once.
