Authentic Assam Masala Chai Recipe
Masala chai starts with strong CTC tea for a reason — it's the only base that holds its own against milk, sugar, and a full spice mix. This is a traditional stovetop method, no shortcuts.
Ingredients (serves 2)
- 2 heaped teaspoons CTC tea
- 1.5 cups water
- 1 cup milk
- 2-3 crushed green cardamom pods
- 1 small piece crushed ginger
- 1 small piece cinnamon (optional)
- 2-3 crushed black peppercorns (optional)
- Sugar to taste
Method
- Bring water to a boil in a saucepan with the crushed spices.
- Simmer for 2 minutes to let the spices infuse the water.
- Add the CTC tea and let it boil for 1 minute.
- Add the milk and sugar, bring back to a boil, then reduce heat and simmer for 2-3 minutes, stirring occasionally.
- Strain into cups and serve hot.
Tips
Crushing the spices rather than using them whole releases far more flavour. Let the tea and spices boil together briefly before adding milk — this is what gives Assam-style chai its depth compared to just steeping everything at once.
