Iced Assam Tea Recipe


Iced tea needs to be brewed stronger than usual, since the ice will dilute it as it melts. This recipe uses the double-strength method for a properly refreshing glass, not a watery one.

Ingredients (makes 2 glasses)

  • 4 teaspoons CTC or Orthodox black tea
  • 1.5 cups boiling water
  • Ice cubes
  • Lemon slices and mint, to garnish
  • Sugar or honey to taste

Method

  1. Steep the tea in boiling water for 4-5 minutes to brew it double strength.
  2. Strain and stir in sugar or honey while the tea is still hot, so it dissolves fully.
  3. Let the tea cool to room temperature.
  4. Fill glasses with ice, pour the cooled concentrated tea over it.
  5. Garnish with lemon slices and mint leaves, serve immediately.

Tips

Never pour hot tea directly over ice at regular strength — it melts the ice too fast and leaves you with weak, diluted tea. Cooling the concentrate first, then pouring over fresh ice, keeps the flavour intact.
