How to Brew Green Tea Without Bitterness
Green tea is unforgiving of boiling water — it's the single biggest reason people end up with a bitter, disappointing cup. Getting the temperature right changes everything.
What You'll Need
- 1 teaspoon green tea leaves per cup (roughly 2g)
- Fresh, filtered water, cooled to 75-80°C
- No milk; sugar or honey optional
Method
- Boil fresh water, then let it cool for 1-2 minutes off the heat until it reaches roughly 75-80°C — noticeably below a rolling boil.
- Add green tea leaves to your cup, teapot, or infuser.
- Pour the cooled water over the leaves and steep for 2-3 minutes only.
- Remove the leaves or strain immediately once steeped — leaving them in will over-extract and turn the tea bitter.
- Serve plain to appreciate the natural flavour.
Tips for a Better Cup
If you don't have a thermometer, let boiling water sit for about 60-90 seconds before pouring — that's usually enough to bring it into range. Good green tea leaves can often be re-steeped once or twice, usually with a slightly shorter steep time each round.
